Valentines Day recipe – No bake chocolate cream tarts – gluten free, dairy free, refined sugar free, grain free, vegan and clean.


Come to the dark side with this decadent chocolate lover’s delight. Be seduced by smooth, luscious chocolate cashew cream, ripe cherries, juicy Summer berries and crunchy cacao nibs.

This Valentine’s Day lovers will receive roses, dine in a fancy restaurant or stay home and cook a special meal. Others will send their special someone a card telling them how much they are missed or perhaps receive a card from a secret admirer (do people still do this??)
I remember the first Valentine’s Day card I received from a secret admirer when I was 15. It arrived in the mail and I ripped the envelope open with great anticipation and excitement. It was signed “…a lovelorn”. My mind went into overdrive. Who could this person be? I went to sleep smiling that night and couldn’t wait to tell my best friend Sheree all about it. The next day at school I pulled the card out of my bag and showed it to her. She let the joke last until about lunch time when she told me it was her who had sent it. I could laugh about it later on but at that moment in time I was so disappointed!

As Valentine’s day falls during Summer in Australia you can skip the hot oven altogether and head straight to the fridge with this mostly raw tart. PLUS you will nourish your body at the same time.

The steps are easy and broken down into 3 parts

Part 1: Blitz crust ingredients in a food processor, push them into tart tin and freeze
Part 2: Soak cashew nuts and blitz in food processor along with all chocolate cream ingredients
Part 3: Pour chocolate cream into tart shells, add the berries and cacao nibs or whatever you fancy and dig in!

How simple is that? Now you have no excuse not to make these for a romantic dessert to share with your loved one.

You’ll need 2 loose bottom tartlet tins measuring 12 cm across. Usually found in the baking section of department stores or kitchenware stores or you can get them online at  Kitchenware Direct for a set of 4.

Here’s an overview on what to do


Blitz crust ingredients in a food processor until mixture starts to clump together.
Push crust into tart pan. Freeze.
Pour chocolate cream filling into frozen tart case.
Choose from a variety of fresh, succulent fruit.
Top your tart with your choice of fruit. Add more toppings like crunchy cacao nibs or crushed nuts plus a flower bud if you like.
Dig in!

Valentines Day recipe – No bake chocolate cream tarts

Yield: Makes 2 individual tarts


    For the crust
  • 1 cup almonds
  • 6 pitted medjool dates (or 1/4 cup packed, pitted dates), soaked in hot water for 15 minutes
  • 2 tablespoons raw cacao powder (or unsweetened cocoa powder)
  • 1/2 teaspoon vanilla extract
  • Pinch of fine pink Himalayan salt
  • For the cream
  • 1 cup raw (natural) cashews, soaked overnight in cold water or for 20 minutes in just boiled water
  • 1/2 cup rice malt syrup
  • 2 tablespoons raw cacao powder (or unsweetened cocoa powder)
  • 1 teaspoon vanilla extract
  • Pinch of fine pink Himalayan salt
  • 3 tablespoons water
  • To garnish: A selection of ripe Summer berries/fruit of choice


    For the crust
  1. Place almonds in food processor and blitz till it turns to a coarse flour
  2. Add remaining ingredients and blitz till mixture clumps together. Divide mixture into 2 balls and push into tart pans. Freeze.
  3. For the cream
  4. Rinse and drain cashews. Place all ingredients in a food processor, high speed blender or smoothie maker with ice crushing blades and blitz till smooth and creamy.
  5. Pour cream into frozen tart case. Top with berries or fruit of choice and cacao nibs or crushed nuts.
