Sunflower seed and herb pesto
Sunflower seed and herb pesto – gluten free, grain free, dairy free, vegan, vegetarian, clean and paleo friendly.
Day 3 of condiments, sauces and dips.
Today I want to share with you a pesto with a difference using toasted sunflower seeds. This pesto would go great slathered over some freshly steamed or barbecued corn or mix through some zucchini noodles. I’ve used a bit of chilli which is optional but I take the seeds out and only use half a chilli which just gives a little bit of oomph to the pesto.
if you’re not eating it straight away, make sure you store it in a glass jar or small bowl and cover over properly with some olive oil (to keep out any air) or place some cling wrap over the top and push it down, making sure to expel all air bubbles otherwise it will quickly go brown.
Another tip – try to use light olive oil or a more neutral flavoured oil.. Using extra virgin olive oil can give this pesto a bitter taste.

- 1/2 cup sunflower seeds, pan toasted
- 3/4 cup chopped fresh chives
- 1/2 cup flat leaf parsley leaves
- 1/4 cup fresh oregano leaves (or basil leaves)
- 1/2 large, long red chilli, de-seeded and roughly chopped
- 1 clove garlic, chopped in half
- 1/4 teaspoon pink Himalayan salt
- 1/2 cup olive oil
- Place all ingredients in a food processor and blitz until smooth.
- Store in a jar or small bowl covered in olive oil or cling wrap until ready to use.
