Lamington shake – Dairy free, gluten free, refined sugar free and clean.
I’ve just returned from my week long holiday in Manly with my other sister Claudia and her kids who were up from Tassie. The weather was perfect and more importantly, her children met their cousins Liam and Dayne for the first time. The youngest, 5 year old Julian, latched onto Liam immediately.
Manly is my favourite suburb in Sydney with beautiful beaches and plenty of cafes and restaurants. Here are a few pics.
As tomorrow is Australia day I wanted to pay tribute to an Australian classic – the lamington cake by turning it into a lamington shake. Perfect for the very hot temperatures we have been experiencing. This lamington shake has texture to it by the addition of shredded coconut. I’ve managed to make it even healthier by sneaking in a handful of organic baby spinach leaves. For the best flavour experience you need to make sure this lamington shake is icy cold. Chill the coconut milk before using and add extra ice cubes if you want. I have used 2 tablespoons of rice malt syrup to sweeten it but I’m not a big sweet tooth so add more sweetener if you wish. This makes 1 serving.

Almonds fight inflammation, nourish the nervous system, provide good brain function, build strong teeth and bones, provide healthy fats which aid in weight loss, reduce the risk of heart disease and help protect against diabetes.
Organic rice malt syrup is easy to digest, is not addictive like regular sugar, has less strain on the liver due to being fructose free and is a better alternative when considering your weight than fructose filled sweeteners.

- 1 cup coconut milk
- 2 tablespoons almond meal
- 2 tablespoons raw cacao powder
- 1/4 cup shredded coconut or 2 tablespoons desiccated coconut
- 1 teaspoon vanilla extract
- 2 tablespoons rice malt syrup
- Optional: Handful of baby spinach leaves
- 8 ice cubes or more depending on preference
- Place all ingredients in a blender with ice crushing blades.
- Garnish with extra shredded coconut
