Chocolate cashew milk smoothie – gluten free, dairy free, refined sugar free, vegan, vegetarian, clean and paleo friendly.

 

So for day 3 of my cashew recipe obsession I thought it only fair that I turn my previous cashew milk recipe into a delicious chocolate cashew milk smoothie. Perfect for a big hit of so-good-for-you energy first thing in the morning or to fuel your brain while studying (great if you don’t have time to cook or want something sweet) or a post workout pick me up, there’s no reason not to give this a try. It’s 100 % healthy and so creamy, delicious and filling.

I dedicate this recipe to my sister Claudia who spends a lot of time studying (and has a big sweet tooth) and has been known to grab a chocolate bar or 2 to fuel up on. We all know the effects such bars can have on us (sugar crash anyone?) or how we become hungry again pretty soon. This shake will give you a sustained feeling of fullness and energy for your brain cells.

If you haven’t had the chance to soak your cashews overnight or make your milk already, you can pour boiled water over your cashews at the same time as your dates and they will both be ready for blitzing at the same time. If you don’t have any dates, you can add the extra sweetness by adding the other 1/2 banana or drizzle in some rice malt syrup or sweetener of choice.

Why this is so good for you

Chocolate cashew smoothie

Serving Size: Serves 1

Ingredients

  • 1 cup cashew milk (plus extra to thin out with)
  • 3 medjool dates, soaked for 10 minutes in just boiled water
  • 1 tablespoon raw cacao powder
  • 1/2 large frozen banana (or 1 small frozen banana)
  • 2 teaspoons chia seeds
  • 1 teaspoon vanilla extract
  • Pinch fine pink Himalayan salt
  • 3 - 4 ice cubes

Instructions

  1. Place all ingredients in a high speed blender and blitz till smooth and creamy. Top up with extra cashew milk to thin out to desired consistency.
